Congusto Institute is a technical partner of Panettone Day. The competition, promoted by Braims in partnership with Novacart, is held in collaboration with Callebaut, 1895 by Lavazza, and Vitalfood. This exclusive contest was created to reward the best artisan Panettoni and celebrate the excellence of Italian pastry. The 2023 edition marks the eleventh since the contest began. Registration officially closed on June 3rd, to allow time for the arrival of the panettoni to be evaluated and to enable the jury of pastry experts to meet on June 15th for the selection at the Milanese school.

The jury is led by Master Gino Fabbri and will determine the 15 best Traditional Panettoni, the 5 best Creative Sweet ones, and the 5 best Gold Chocolate ones that will advance to the final. Other jurors include prominent figures in the culinary scene, such as Michelin-starred chef Carlo Cracco, pastry chef Marco Pedron, currently a freelance consultant and Pastry Director of the Congusto Institute, Adriano Del Mastro, an expert in leavened products, Marta Boccanera, who, along with her partner and associate, received the "best pastry chefs in the world" award, and Giordano Berettini, winner of the 2022 edition of Panettone Day.
Dates for the Panettone Day Temporary Store
On September 12th, the proclamation of the winners for each category will take place in the magnificent Sala Mengoni at Cracco in Galleria Vittorio Emanuele II in Milan. From October 3rd to 28th, the finalists' Panettoni will be on sale at the Panettone Day Temporary Store. It is a highly prestigious showcase, a retail location that, as is customary, will be at the corner of Corso Garibaldi and Via Palermo 21 in Milan. An exclusive location in one of Milan's most loved streets, frequented by many Italian and foreign visitors alike.
