Who we are

Congusto Institute was founded in Milan in 2003. It is an independent school of professional gastronomic training. Founded by Federico Lorefice and Daniel Stoico , entrepreneurs with over twenty years of experience in the food industry, the school is a structured higher education project, focused on careers and contemporary gastronomic culture. Today, Congusto Institute is a hub for gastronomic training in Italy, with programs designed for those who want to acquire solid skills, method, and a professional vision in the restaurant industry.

The school is accredited by the Lombardy Region and ISO 9001 certified, guaranteeing the quality of its training processes and teaching organization. Congusto Institute is part of the Italian Gourmet galaxy, the food division of DBInformation SpA , the most comprehensive system of information, content, and events dedicated to the world of food for industry professionals.
Grande Cucina , directed by Federico Lorefice, is also part of this ecosystem, the B2B magazine dedicated to great chefs and Italian fine dining.

The Congusto Institute's educational direction is entrusted to Roberto Carcangiu and Marco Pedron , leading figures in Italian professional cuisine and pastry making. Roberto Carcangiu is a chef, technical and scientific consultant for food service companies, and president of the Association of Italian Professional Chefs. He contributes to the development of training programs, ensuring method, teaching consistency, and alignment with industry standards. Marco Pedron, former head pastry chef at Cracco and a member of APEI – Pastry Chef Ambassadors of Italian Excellence, brings a contemporary approach to pastry making to the school, strongly rooted in fine dining and teamwork.
