The pastry course in Milan at Congusto Instituteis an Advanced Training program designed for those who want to turn their passion for pastry into a profession, building solid technical skills, methodology, and the ability to work in a real laboratory.
The training is predominantly practical. Students work on fundamental pastry preparations and progressively develop precision, organization, and autonomy, learning about raw materials, processes, and techniques that form the basis of professional production.
The academic direction is entrusted to Marco Pedron, APEI master pastry chef and former Head Pastry Chef of Cracco in Galleria, alongside Executive Resident Pastry Chef Daniele Passaretti, who is present daily throughout the training program.
The program also includes visiting chefs and professionals for specific modules, including maître chocolatier Charlotte Dusart, Cesare Murzillifrom Portrait Milano, Giovanni Gibertifrom Pavé, and other interpreters of contemporary pastry.
The interaction between a stable Faculty and professionals from different backgrounds allows students to learn various approaches, techniques, and working models, maintaining a direct connection with the evolution of the sector.
