After more than twenty years of experience in the training sector, we can say that we have witnessed a radical evolution in the catering industry. Not only has the fascination for a profession that was never truly considered a trade grown, but roles and expectations have changed as well. While the court cook was once conceived as a master of ceremonies with a primary responsibility for entertaining sovereigns and guests, that is no longer their role today. Better yet, these figures are no longer limited to providing only entertainment and meals; rather, it is the social responsibilities and the associated economic and political interests that serve as driving forces. For the generations entering our sector today, the paths to take are increasingly numerous, difficult to identify, and often lead to unclear professional opportunities.
How do we train (our) cooks of tomorrow? How do we educate new generations in a culture of nutrition and products in line with the planet's needs? How do we structure professional training tailored to Gen Z and, soon, Gen Alpha?
In this very regard, the educational offer of Congusto Institute starts with the students, born with them to evolve in a fluid and effective way by embracing change. Students are an absolute priority, to be protected by safeguarding small classes, workspaces equipped with the best technical instrumentation, and constant dialogue, both during and after graduation. From vertical modules focused on haute cuisine, pastry, or baking, to courses in white arts, chocolate making, coffee service, and management, the institute aims for conscious and contemporary training. What are the current trends, how are consumption and consumers changing, how do supply and demand evolve. The time for a module that remains constant over time is over, because learning, like our daily lives, requires adjustments, new proportions, and new points of view. The real challenge for those involved in training today is to succeed in forming a critical conscience in young cooks and professionals who will work in the catering industry, strengthening themselves with an identity-based and individual perspective. The static nature of the past, the given notions and patterns, are no longer sustainable and, in fact, risk becoming anachronistic very quickly. Our responsibility is not limited to transmitting teachings but passes through the curiosity, passion, interests, and personal goals that every professional should cultivate.

On this occasion, the 2024-2025 educational offer will be presented together with a schedule of free laboratory activities, to get hands-on experience with classrooms and spaces, themes and products. Cooking courses, guided tastings, photography, communication, and social media workshops will bring young people closer to multi-level, multi-channel, and engaging training.
