La Direzione Didattica è affidata a Roberto Carcangiu, Presidente APCI (Associazione Professionale Cuochi Italiani), la cui esperienza tecnica e conoscenza del mercato orientano i programmi formativi della scuola verso le competenze richieste dal mondo professionale.
