Designed for international students, this comprehensive course blends theory, hands-on practice, and real-world experience to transform your love for pastries into a rewarding profession.

Program Highlights:

  1. Classroom Insights:Dive deep into the world of Italian pastry, exploring its rich history and cultural significance. Learn about traditional techniques and modern innovations.
  2. Hazard Analysis and Critical Control Points (HACCP): Understand safety protocols and best practices in a professional kitchen environment.
  3. Occupational Safety and Health: Prioritize safety while honing your pastry skills.
  4. Basic Preparations: Master the art of making delicate choux pastry, flaky puff pastry, and irresistible brioches. Create perfect pastry dough and explore whipped masses (butter-eggs and meringues). Dive into cooking techniques, basic creams, fillings, and decadent ganache.
  5. Regional Italian Pastries:Craft iconic treats like strudel, sbrisolona, ​​and various tarts. Delve into beloved classics such as cassata, tiramisu, and babà. Explore the art of fruit chantilly and bake delicate delights like cantuccini, amaretti, and baci di dama. Discover fried favorites like Sicilian cannoli, chiacchiere, and Neapolitan struffoli.
  6. Italian Breakfast Delights: Produces an array of morning treats, including Maritozzo, sweet and savory focaccia, and the classic Italian croissant.
  7. Artisanal Italian Ice Cream:Trace the history of ice cream and learn the basics of crafting authentic Italian ice cream.
  8. Final Test:Showcase your newfound skills and knowledge.


Practical Details:

Duration: 100 hours of in-school training.

Optional Internship: 

Extend your learning with a 2-month internship at prestigious Milanese pastry shops.


€7,000 (includes in-School training, Congusto's uniform, teaching material)

€500 (Optional fee for Internship subscription + mandatory workplaces safety course).


Monday to Friday, 9:30 AM to 1:30 PM.

Admission criteria

  • Holders of diplomas from higher education hospitality institutes or equivalent
  • Foreigners with experience from the food and/or hospitality sector
  • Food enthusiasts or people already working in the field with at least one year of documented experience in hospitality industry
  • Eligibility to study in EU
  • 18 years or older
  • Basic knowledge of Italian language (optional)

The Diploma* is awarded on successful completion of In-school-training.

*At the end of the in-school training students who attended at least 80% of the classes will be admitted to the final examination and will get the Diploma.
