ITALIAN CULINARY PROGRAM

The Intensive Professional Course in Italian Cuisine is designed to train aspiring professional chefs with different skills ranging from knowledge and selection of raw materials to the basics of Classic Italian Cuisine, to the learning of basic techniques and the use of equipment; all this is complemented by the acquisition of knowledge concerning nutritionism and professional ethics.
With the patronage of A.P.C.I. – Associazione Professionale Cuochi Italiani (Professional Association of Italian Chefs).
Congusto Gourmet Institute is since 2003 one of the top Italian culinary art schools. Congusto provides a truly hands-on experience for students who aspire to a career in the culinary field (Italian cooking, pastry and bakery). The classes are held by professional chefs and pastry chefs, very well known in Italy. The didactic approach of the School is a mix of cooking culture and technique. Since July 2014 Congusto Gourmet Institute has been certified as a professional school and has obtained the quality certification UNI EN ISO 9001:2008.
The Intensive Professional Course in Italian Cuisine is addressed to those who have no experience or a short experience in the catering sector and want to pursue the profession of chef.
Our courses are designed to teach you the actual practice and art of Italian cooking through theory, technique, palate training, speed, and teamwork. Small-sized classes assure that you will have personal attention of internationally experienced chef instructors allowing you to apply what you have learned in the labs. The School also provides participating students with an internship.

The internship (mandatory – of one to two months) is an important part of the culinary programme. Students are placed by the School in prestigious restaurants and/or hotels in Milano. The internship is a unique experience to apply the skills learned during the training and to gain a first professional experience.
At the end of the course, once the final exam has been passed, the student will receive a certificate of attendance under the patronage of APCI – Professional Association of Italian Chefs, as well as the HACCP certificate.
Tuition includes tools, uniforms, excursions and materials related to the course (*). Accommodations and living expenses are not included in tuition.

Admissions are generally open to high school graduates (you must be 18 years old by the program start date). Candidates with previous training in cuisine, pastry or restaurant management should consult us before applying to determine eligibility for the Intensive Professional Program in English (Cuisine or Pastry).
Although Italian language skills are not required for Intensive Professional Programs in English (Cuisine or Pastry), knowledge of the language will greatly ease participants’ settling in Milano and their educational experience and we strongly recommend that accepted candidates start to learn Italiano before the program. Participants in these programs will be required to attend Italian language courses and some courses will be taught in Italiano (with translation).
Application requirements for the Intensive Professional Programs in English are as follows:

- At least 1 recommendation letter (preferably relevant to the culinary field or to previous work experience) –in English, on letterhead, signed by the referee and including his/her contact information
- An essay explaining the candidate’s motivations for applying, his/her career intentions, previous experience and why he/she has chosen our School – in English
- A resumé / CV – in English
- Official transcripts from previous studies
- Photocopy of passport
- 1 passport photo
- A non-refundable 200 Euros application fee (by credit card / PayPal or wire transfer)
Applications may be e-mailed to email@example.com, however we do require originals so candidates should send their complete applications by regular mail after e-mailing. Candidates will be informed of the admission decision in a timely manner, usually within 30 business days of receipt of the application, by e-mail and/or regular mail. Applications will be reviewed by an admissions committee composed of program staff and instructors. Selected candidates may be invited to interview by phone or in person.

Congusto Gourmet Institute has no on-campus housing, however the school offers advice on finding suitable accommodations. A list of housing possibilities and contacts is available to all candidates once they have been admitted to the program.
